Salsify Gin
An Ingredient of the Future from Our 'Salsify' Cocktail

- Wash the Salsify: Rinse thoroughly under cold water to remove all soil residue.
- Peel and Dice using a vegetable peeler and cut into 3 cm cubes.
- Sprinkle with salt and let sit for 15 minutes.
- Rinse off excess salt under running water.
- Place salsify in a vacuum bag, add gin in a 1:1 ratio, seal, and cook sous-vide at 50°C for 1 hour.
- Transfer the cooked salsify to a Thermomix, add 280 ml of water, and blend until completely smooth.
- Pass the mixture through a coffee filter.
- Bottle.
