Beetroot Cordial
An Ingredient of the Future from Our 'Golden Beetroot' Cocktail

TARTARIC 8GR
SUGAR 400GR
SALT 4GR
LIME 3GR
- Wash the golden beetroot under cold running water.
- Slice the beetroot into thin, even slices using a mandoline.
- Place the beetroot slices in a vacuum bag.
- Finely grate the zest of the limes, avoiding the white pith.
- Add sugar, ascorbic acid, tartaric acid, salt, and lime zest to the vacuum bag with the beetroot.
- Seal the bag under vacuum and let it macerate at room temperature for 24 hours.
- After 24 hours, open the bag and strain the liquid through a fine mesh sieve.
- Bottle and refrigerate.
