Beetroot Cordial

TARTARIC 8GR
SUGAR 400GR
SALT 4GR
LIME 3GR

  1. Wash the golden beetroot under cold running water.
  2. Slice the beetroot into thin, even slices using a mandoline.
  3. Place the beetroot slices in a vacuum bag.
  4. Finely grate the zest of the limes, avoiding the white pith.
  5. Add sugar, ascorbic acid, tartaric acid, salt, and lime zest to the vacuum bag with the beetroot.
  6. Seal the bag under vacuum and let it macerate at room temperature for 24 hours.
  7. After 24 hours, open the bag and strain the liquid through a fine mesh sieve.
  8. Bottle and refrigerate.
