Sweet Potato Cordial

A vibrant and familiar Spritz style cocktail that blends earthy notes with a hint of sweetness.

200G SWEET POTATOES

440G WATER

220G BROWN SUGAR

4G SALT

5G MALIC ACID

20G ACACIA GUM

  1. Bake the sweet potatoes at 180°C for 30 minutes until they are soft inside.
  2. Place the baked sweet potato, water, brown sugar, salt, malic acid, and acacia gum, in a blender and blitz the ingredients until you achieve a puree consistency.
  3. Freeze it overnight, then strain the frozen product with a coffee filter to clarify the liquid.
