Pumpkin Tequila
An Ingredient of the Future from our 'Melon' Cocktail
600G PUMPKIN
200G SWEET POTATO
500ML COCONUT MILK
2G GINGER GROUND
600ML TEQUILA
1.Cut the pumpkin and the sweet potato into small pieces add all of the ingredients into the Thermomix apart the Don Julio.
2.Thermomix for 30 minutes at 60°C (4 speed) for the first 20 minutes and the last 10 minutes at maximum speed.
OR
2.Blend everything together, apart from the tequila, then cook at low temperature for 30 minutes (with the lid on top of the pan).
3.Add the tequila once the liquid has cooled down, seal in a vacuum bag and freeze it overnight.
4.Filter with a coffee filter after 24 hours.
