1.6 KG GOOSEBERRIES
2L WATER
10 CINAMON STICK, 4 STAR ANICE
1 WHOLE LIME ZEST
CIDER VINEGAR AS NEEDED

  1. Cook all the ingredients sous vide for 70 minutes at 55°C.
  2. Let it cool down.
  3. Remove the lime, cinnamon, and star anise.
  4. Blend the remaining ingredients.
  5. Filter through a coffee strainer.
  6. For every 100 ml of juice, add 7.5 ml of cider vinegar.
  7. Bottle and refrigerate.
