1.6 KG GOOSEBERRIES
2L WATER
10 CINAMON STICK, 4 STAR ANICE
1 WHOLE LIME ZEST
CIDER VINEGAR AS NEEDED
- Cook all the ingredients sous vide for 70 minutes at 55°C.
- Let it cool down.
- Remove the lime, cinnamon, and star anise.
- Blend the remaining ingredients.
- Filter through a coffee strainer.
- For every 100 ml of juice, add 7.5 ml of cider vinegar.
- Bottle and refrigerate.
