Apple Crumble Syrup
An Ingredient of the Future from Our 'Apple' Cocktail
500 APPLE
180GR DEMERARA SUGAR
300G WATER
100ML DI SARONNO
3GR CINNAMON
PINCH SALT
- Cut the apple into pieces about 3cm in size.
- In a pan, add the apple, sugar, and cinnamon. Cook over medium heat.
- Once the sugar has dissolved and begins to caramelize, add water, Disaronno, and salt.
- Bring to a boil over medium heat and cook for about 20 minutes, or until the apple is soft.
- Remove from heat and let rest for 15 minutes.
- Strain through a Superbag while pressing gently, then strain again through a coffee filter.
- For every 500 ml of liquid, add 30g Disaronno.
- Bottle and refrigerate.
