Apple Crumble Syrup

An Ingredient of the Future from Our 'Apple' Cocktail

500 APPLE
180GR DEMERARA SUGAR
300G WATER
100ML DI SARONNO
3GR CINNAMON
PINCH SALT

  1. Cut the apple into pieces about 3cm in size.
  2. In a pan, add the apple, sugar, and cinnamon. Cook over medium heat.
  3. Once the sugar has dissolved and begins to caramelize, add water, Disaronno, and salt.
  4. Bring to a boil over medium heat and cook for about 20 minutes, or until the apple is soft.
  5. Remove from heat and let rest for 15 minutes.
  6. Strain through a Superbag while pressing gently, then strain again through a coffee filter.
  7. For every 500 ml of liquid, add 30g Disaronno.
  8. Bottle and refrigerate.
