Pickled Hawthorn Berry
An Ingredient of the Future from Our 'Hawthorn Berry' Cocktail
700ML NOAM LAGER
125G SUGAR
10ML GLYCERINE
35ML RICE VINEGAR
150G PEELED ORANGE
150G PEELED GRAPEFRUIT
75G HAWTHORN BERRIES
- Whisk the beer to reduce bubbles.
- Pour into a Thermomix with sugar, vinegar, and glycerin, and heat to 50°C for 3 minutes. (Alternatively, use a pan over medium heat until sugar dissolves.)
- Let it cool.
- Peel and cut the oranges and grapefruits.
- Add hawthorn, citrus, and room temperature beer into a plastic bag and seal.
- Let it rest at room temperature for 3 days.
- Strain and gently squeeze the citrus.
- Bottle and refrigerate.
