Kaffir Milk Cordial

An Ingredient of the Future from our 'Wild Rose' Cocktail

40G KAFFIR LIME LEAVES

950ML WATER

200G SUGAR

21G LACTIC ACID

450ML FULL FAT MILK

  1. Blanch 25g kaffir leaves in boiling water for 20 seconds.
  2. Place in the ice bath for 60 seconds.
  3. Blend together with the sugar, lactic acid and 800ml of water and set aside.
  4. Combine 150ml of water with the milk in a saucepan and place on medium heat.
  5. Add 15g of kaffir leaves and stir for 2 minutes.
  6. Pour and strain the liquid into a large container.
  7. Add the set aside Cordial to the liquid.
  8. Let it rest for 20 minutes.
  9. Strain with a coffee filter.
  10. Bottle until use.
