Kaffir Milk Cordial
An Ingredient of the Future from our 'Wild Rose' Cocktail
40G KAFFIR LIME LEAVES
950ML WATER
200G SUGAR
21G LACTIC ACID
450ML FULL FAT MILK
- Blanch 25g kaffir leaves in boiling water for 20 seconds.
- Place in the ice bath for 60 seconds.
- Blend together with the sugar, lactic acid and 800ml of water and set aside.
- Combine 150ml of water with the milk in a saucepan and place on medium heat.
- Add 15g of kaffir leaves and stir for 2 minutes.
- Pour and strain the liquid into a large container.
- Add the set aside Cordial to the liquid.
- Let it rest for 20 minutes.
- Strain with a coffee filter.
- Bottle until use.
