Red Currant Brine

An Ingredient of the Future from Our 'Currant' Cocktail

300GR RED CURRANT
130GR WATER
130 MAPLE SYRUP
VERJUS
8GR SALT

  1. Blend the currants with salt, maple verjus, and water.
  2. Strain into a jar, cover with a cloth, and let sit at room temperature for 24 hours.
  3. Strain through a fine sieve.
  4. Strain again through a coffee filter.
  5. Bottle and keep refrigerated.
