130 MAPLE SYRUP

8GR SALT
- Blend the currants with salt, maple verjus, and water.
- Strain into a jar, cover with a cloth, and let sit at room temperature for 24 hours.
- Strain through a fine sieve.
- Strain again through a coffee filter.
- Bottle and keep refrigerated.
