500G OF SUGAR SNAP PEAS
500ML OF WATER
2 DROPS OF PECTINASE
SUGAR
- Start by blending the sugar snap peas with water in the thermomix on power 10 for 5 minutes.
- Strain through sieve to remove the fibre.
- Add 2 drops of pectinase and stir in.
- Freeze the mixture overnight.
- Strain the frozen juice through a coffee filter.
- Add 1:1 liquid/sugar.
- Bottle it.
Shelf life: 2 weeks.
