Pea Syrup

The sweet and savoury notes of peas come together with tangy tones of apple.

500G OF SUGAR SNAP PEAS

500ML OF WATER

2 DROPS OF PECTINASE

SUGAR

  1. Start by blending the sugar snap peas with water in the thermomix on power 10 for 5 minutes.
  2. Strain through sieve to remove the fibre.
  3. Add 2 drops of pectinase and stir in.
  4. Freeze the mixture overnight.
  5. Strain the frozen juice through a coffee filter.
  6. Add 1:1 liquid/sugar.
  7. Bottle it.

Shelf life: 2 weeks.
