45ml Santa Teresa
20ml Noni Cordial
5ml Cardomon triple sec
5ml Merlet Lune d’abricot
20ml Still water
How to mix it
To make the noni cordial, you will need to buy noni (or cheese fruit) juice which is actually readily available online. It comes from Polynesia and gives this cocktail a distinctive tropical flavour. Mix equal amounts of noni juice and caster sugar, and steep with fresh papaya. Leave for an hour, blend and then strain through muslin or a fine sieve.
The cardomon triple sec is made by putting smashed cardamom pods to infuse in Pierre Fernand triple sec for several hours before straining through a coffee filter or muslin.
In terms of technique, it’s simple, pour the ingredients in a cocktail shaker, then throw them, rather than shake them. Serve in a chilled high ball glass.
